Ingredients

  • 2 large poblano peppers
  • 250 grams ground turkey
  • 50 grams shredded cheddar cheese
  • 50 grams cream cheese, softened
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon olive oil
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Wash the poblano peppers, cut them in half lengthwise, and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  4. Add the ground turkey to the skillet, cooking until browned. Stir in the ground cumin, smoked paprika, salt, and pepper, mixing well.
  5. Remove the skillet from heat and allow the mixture to cool slightly. Stir in the cream cheese and shredded cheddar cheese until well combined.
  6. Stuff each poblano pepper half with the turkey and cheese mixture, pressing down gently to pack it in.
  7. Place the stuffed peppers on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is hot and bubbly.
  8. Remove from the oven and let cool for a few minutes before garnishing with fresh cilantro. Serve warm.
