- 2 large poblano peppers
- 250 grams ground turkey
- 50 grams shredded cheddar cheese
- 50 grams cream cheese, softened
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1 tablespoon olive oil
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 190°C (375°F).
- Wash the poblano peppers, cut them in half lengthwise, and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground turkey to the skillet, cooking until browned. Stir in the ground cumin, smoked paprika, salt, and pepper, mixing well.
- Remove the skillet from heat and allow the mixture to cool slightly. Stir in the cream cheese and shredded cheddar cheese until well combined.
- Stuff each poblano pepper half with the turkey and cheese mixture, pressing down gently to pack it in.
- Place the stuffed peppers on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is hot and bubbly.
- Remove from the oven and let cool for a few minutes before garnishing with fresh cilantro. Serve warm.
