Ingredients
- 2 medium poblano peppers
- 250 grams lean ground turkey or chicken
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1/2 cup black beans, rinsed and drained
- 2 whole grain burger buns
- 1 ripe avocado
- 1 tablespoon lime juice
- 2 tablespoons chopped fresh cilantro
- 1/4 cup diced red onion
- 1/2 cup shredded lettuce
- Sliced tomatoes - for topping
Steps
- Preheat a grill or grill pan over medium-high heat.
- Place the poblano peppers on the grill and roast until the skin is blistered and charred, about 8-10 minutes, turning occasionally. Once done, remove from the grill and place in a bowl covered with plastic wrap to steam for 5 minutes.
- In a mixing bowl, combine the ground turkey or chicken, cumin, smoked paprika, salt, and pepper. Form into 2 patties.
- Grill the patties on medium heat for about 6-7 minutes per side, or until cooked through and internal temperature reaches 75°C (165°F).
- While the patties are cooking, prepare the avocado sauce by blending the avocado, lime juice, cilantro, salt, and pepper until smooth.
- Once the poblano peppers have steamed, peel the skin off and remove the seeds. Cut each pepper in half lengthwise.
- To assemble, spread a layer of the avocado sauce on the bottom half of each burger bun. Place the turkey or chicken patty on top, followed by the poblano pepper halves, black beans, diced red onion, shredded lettuce, and sliced tomatoes.
- Top with the other half of the bun and serve immediately.
