Ingredients

  • Poblano peppers - 2 large
  • Ground turkey - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 100 grams, softened
  • Cheddar cheese - 50 grams, shredded
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally until the skin is blistered and charred. Remove from the oven and let them cool.
  3. In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Season with cumin, chili powder, salt, and black pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes.
  5. Once the turkey mixture is cooked, remove from heat and stir in the softened cream cheese until fully combined. Mix in half of the shredded cheddar cheese.
  6. Once the roasted poblanos are cool enough to handle, carefully peel off the skin and make a slit down one side of each pepper to remove the seeds.
  7. Stuff each poblano pepper with the turkey and cheese mixture, then place them in a baking dish.
  8. Sprinkle the remaining cheddar cheese on top of the stuffed peppers.
  9. Bake in the preheated oven for 15 minutes, until the cheese is bubbly and golden.
  10. Remove from the oven and garnish with fresh cilantro before serving.
