Ingredients
- Poblano peppers - 2 large
- Ground turkey - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cream cheese - 100 grams, softened
- Cheddar cheese - 50 grams, shredded
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally until the skin is blistered and charred. Remove from the oven and let them cool.
- In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Season with cumin, chili powder, salt, and black pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes.
- Once the turkey mixture is cooked, remove from heat and stir in the softened cream cheese until fully combined. Mix in half of the shredded cheddar cheese.
- Once the roasted poblanos are cool enough to handle, carefully peel off the skin and make a slit down one side of each pepper to remove the seeds.
- Stuff each poblano pepper with the turkey and cheese mixture, then place them in a baking dish.
- Sprinkle the remaining cheddar cheese on top of the stuffed peppers.
- Bake in the preheated oven for 15 minutes, until the cheese is bubbly and golden.
- Remove from the oven and garnish with fresh cilantro before serving.
