  • Ground beef - 300 grams
  • Poblano peppers - 2 large
  • Avocado - 1 medium
  • Lime - 1 (juice only)

  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese - 50 grams (shredded)
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 4 large (for wrapping)
  • Tomato - 1 medium (sliced)

Steps

  1. Preheat your grill or skillet over medium-high heat.
  2. While the grill is heating, prepare the poblano peppers by placing them directly on the grill until charred and blistered on all sides, about 8-10 minutes. Remove from heat and place in a bowl covered with plastic wrap to steam for 5 minutes.
  3. In a mixing bowl, combine the ground beef, garlic powder, onion powder, salt, and black pepper. Form into two equal patties.
  4. Once the poblano peppers are cool enough to handle, peel off the charred skin, remove the seeds, and slice them open lengthwise.
  5. Cook the beef patties on the grill or skillet for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, top each patty with shredded cheddar cheese to melt.
  6. While the patties are cooking, make the guacamole by mashing the avocado in a bowl and mixing in lime juice, chopped cilantro, and a pinch of salt.
  7. Assemble the burgers by placing each beef patty on a lettuce leaf, topping with roasted poblano peppers, and a generous scoop of guacamole. Add tomato slices if desired.
