- Poblano peppers - 2 large
- Avocado - 1 medium
- Lime - 1 (juice only)
- Cilantro - 2 tablespoons (chopped)
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cheddar cheese - 50 grams (shredded)
- Olive oil - 1 tablespoon
- Lettuce leaves - 4 large (for wrapping)
- Tomato - 1 medium (sliced)
Steps
- Preheat your grill or skillet over medium-high heat.
- While the grill is heating, prepare the poblano peppers by placing them directly on the grill until charred and blistered on all sides, about 8-10 minutes. Remove from heat and place in a bowl covered with plastic wrap to steam for 5 minutes.
- In a mixing bowl, combine the ground beef, garlic powder, onion powder, salt, and black pepper. Form into two equal patties.
- Once the poblano peppers are cool enough to handle, peel off the charred skin, remove the seeds, and slice them open lengthwise.
- Cook the beef patties on the grill or skillet for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, top each patty with shredded cheddar cheese to melt.
- While the patties are cooking, make the guacamole by mashing the avocado in a bowl and mixing in lime juice, chopped cilantro, and a pinch of salt.
- Assemble the burgers by placing each beef patty on a lettuce leaf, topping with roasted poblano peppers, and a generous scoop of guacamole. Add tomato slices if desired.
- Wrap the lettuce around the burger and serve immediately.
