Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Mushrooms - 100 grams, sliced
  • Corn - 100 grams (canned or frozen)
  • Black beans - 100 grams (canned, rinsed and drained)
  • Mexican cheese blend - 100 grams, shredded
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, toss the sliced red bell pepper, zucchini, red onion, mushrooms, and corn with olive oil, cumin, chili powder, salt, and black pepper.
  3. Spread the vegetables on a baking sheet in a single layer and roast in the preheated oven for about 15 minutes, or until tender and slightly caramelized.
  4. While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled dough to a baking sheet or pizza stone.
  6. Once the vegetables are done roasting, remove them from the oven and spread the black beans evenly over the pizza dough.
  7. Layer the roasted vegetables on top of the black beans, then sprinkle the shredded Mexican cheese blend evenly over everything.
  8. Bake the pizza in the oven for about 10-12 minutes, or until the cheese is bubbling and the crust is golden.
  9. Remove the pizza from the oven, let it cool for a couple of minutes, then garnish with chopped cilantro before slicing and serving.
