- Pizza dough - 200 grams
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Mushrooms - 100 grams, sliced
- Corn - 100 grams (canned or frozen)
- Black beans - 100 grams (canned, rinsed and drained)
- Mexican cheese blend - 100 grams, shredded
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- In a large bowl, toss the sliced red bell pepper, zucchini, red onion, mushrooms, and corn with olive oil, cumin, chili powder, salt, and black pepper.
- Spread the vegetables on a baking sheet in a single layer and roast in the preheated oven for about 15 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a baking sheet or pizza stone.
- Once the vegetables are done roasting, remove them from the oven and spread the black beans evenly over the pizza dough.
- Layer the roasted vegetables on top of the black beans, then sprinkle the shredded Mexican cheese blend evenly over everything.
- Bake the pizza in the oven for about 10-12 minutes, or until the cheese is bubbling and the crust is golden.
- Remove the pizza from the oven, let it cool for a couple of minutes, then garnish with chopped cilantro before slicing and serving.
