Ingredients

  • Whole wheat tortillas - 2
  • Black beans - 1 cup, cooked and mashed
  • Corn kernels - 1/2 cup
  • Red bell pepper - 1, diced
  • Zucchini - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Spinach - 1 cup, fresh
  • Shredded low-fat mozzarella cheese - 1 cup
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a bowl, mix the mashed black beans with cumin, chili powder, salt, and black pepper to taste.
  3. Brush each tortilla lightly with olive oil on one side and place them on a baking sheet, oil side down.
  4. Spread the black bean mixture evenly over the un-oiled side of each tortilla.
  5. Layer the corn, diced red bell pepper, zucchini slices, red onion, and spinach on top of the black bean spread.
  6. Sprinkle the shredded mozzarella cheese evenly over the vegetable toppings.
  7. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are crispy.
  8. Remove from the oven and let cool for a couple of minutes before slicing.
  9. Garnish with fresh cilantro before serving.
