- Whole wheat tortillas - 2
- Black beans - 1 cup, cooked and mashed
- Corn kernels - 1/2 cup
- Red bell pepper - 1, diced
- Zucchini - 1, sliced
- Red onion - 1/2, thinly sliced
- Spinach - 1 cup, fresh
- Shredded low-fat mozzarella cheese - 1 cup
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- In a bowl, mix the mashed black beans with cumin, chili powder, salt, and black pepper to taste.
- Brush each tortilla lightly with olive oil on one side and place them on a baking sheet, oil side down.
- Spread the black bean mixture evenly over the un-oiled side of each tortilla.
- Layer the corn, diced red bell pepper, zucchini slices, red onion, and spinach on top of the black bean spread.
- Sprinkle the shredded mozzarella cheese evenly over the vegetable toppings.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are crispy.
- Remove from the oven and let cool for a couple of minutes before slicing.
- Garnish with fresh cilantro before serving.
