Ingredients

  • Whole wheat tortillas - 2 large
  • Firm tofu - 200 grams, cubed
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Corn kernels - 100 grams (fresh or frozen)
  • Black beans - 100 grams, drained and rinsed
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Avocado - 1 small, sliced for topping

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine the cubed tofu with olive oil, chili powder, cumin, garlic powder, and salt. Toss well to coat.
  3. Spread the marinated tofu onto a baking sheet and bake for 15 minutes until slightly crispy.
  4. While the tofu is baking, heat a skillet over medium heat and add a little olive oil. Sauté the red onion and bell pepper until soft, about 5 minutes.
  5. Add the corn and black beans to the skillet and cook for another 2-3 minutes until heated through. Remove from heat and stir in chopped cilantro and lime juice.
  6. Once the tofu is ready, remove it from the oven and assemble the pizzas: place a tortilla on a plate, top with the sautéed vegetable mixture, and then add the baked tofu on top.
  7. Repeat with the second tortilla. Optionally, drizzle with additional lime juice and top with avocado slices.
  8. Serve immediately and enjoy your Pizzas de Tofu!
