- Chipotle in adobo sauce - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Tomato - 1 large, diced
- Low-fat mozzarella cheese - 100 grams, shredded
- Cilantro - 2 tablespoons, chopped
- Avocado - 1 small, sliced
- Lime - 1, cut into wedges
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet over medium heat, add olive oil and sauté the sliced onion and minced garlic until softened, about 3-4 minutes.
- Add the cooked shredded chicken and chipotle in adobo sauce to the skillet, mixing well. Cook for another 5 minutes, allowing the flavors to meld.
- Preheat the oven to 200°C (400°F).
- On a baking sheet, place the whole wheat tortillas and spread the chicken mixture evenly over each tortilla.
- Top each pizza with diced tomatoes and shredded mozzarella cheese.
- Bake in the preheated oven for 10-12 minutes or until the cheese is melted and slightly golden.
