  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Tomato - 1 large, diced
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Cilantro - 2 tablespoons, chopped
  • Avocado - 1 small, sliced
  • Lime - 1, cut into wedges
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet over medium heat, add olive oil and sauté the sliced onion and minced garlic until softened, about 3-4 minutes.
  2. Add the cooked shredded chicken and chipotle in adobo sauce to the skillet, mixing well. Cook for another 5 minutes, allowing the flavors to meld.
  3. Preheat the oven to 200°C (400°F).
  4. On a baking sheet, place the whole wheat tortillas and spread the chicken mixture evenly over each tortilla.
  5. Top each pizza with diced tomatoes and shredded mozzarella cheese.
  6. Bake in the preheated oven for 10-12 minutes or until the cheese is melted and slightly golden.
