Ingredients

  • Tomatillos - 250 grams, husked and chopped
  • Fresh cilantro - 30 grams, chopped
  • Jalapeño - 1, seeded and minced
  • Garlic - 2 cloves, minced
  • Lime juice - 30 ml
  • Olive oil - 15 ml
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Shredded cheese (mozzarella or queso fresco) - 150 grams
  • Sliced avocado - 1, for topping
  • Sour cream - 60 ml, for drizzling

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a blender or food processor, combine chopped tomatillos, cilantro, jalapeño, garlic, lime juice, olive oil, salt, and pepper. Blend until smooth to create the salsa verde.
  3. Spread a generous amount of salsa verde over each gluten-free pizza crust.
  4. Sprinkle shredded cheese evenly over the top of the salsa verde on each pizza.
  5. Place the pizzas on a baking tray and bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  6. Remove the pizzas from the oven and let them cool for a minute. Top with sliced avocado and drizzle with sour cream before serving.
