Ingredients

  • Corn tortillas - 4 pieces
  • Olive oil - 2 tablespoons

  • Tomatoes - 400 grams, diced (canned or fresh)
  • Chipotle peppers in adobo - 1 tablespoon, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and chopped onion, and sauté until translucent, about 3-4 minutes.
  3. Add diced tomatoes, chipotle peppers, cumin, oregano, salt, and black pepper to the skillet. Stir well and let simmer for about 10 minutes until the sauce thickens.
  4. While the sauce is cooking, brush both sides of the corn tortillas with the remaining olive oil. Place them on a baking sheet.
  5. Once the sauce is ready, spread a generous amount on each tortilla, leaving a small border around the edges.
  6. Top each pizza with sliced bell pepper and zucchini, distributing evenly.
  7. Bake in the preheated oven for 10-12 minutes, or until the tortillas are crispy and the vegetables are tender.
  8. Remove from the oven and drizzle with lime juice and sprinkle with fresh cilantro before serving.
