Ingredients

  • Whole wheat pizza dough - 250 grams
  • Poblano peppers - 2 medium
  • Onion - 1 small, sliced
  • Corn - 100 grams, drained
  • Black beans - 100 grams, rinsed and drained
  • Shredded mozzarella cheese - 100 grams
  • Low-fat Greek yogurt - 50 grams
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roast the poblano peppers on a grill or directly over a flame until charred on all sides. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes.
  3. While the peppers are steaming, heat olive oil in a skillet over medium heat. Add sliced onion and sauté until translucent, about 5 minutes.
  4. Remove the skins from the poblanos, slice them open, and remove the seeds. Cut into strips.
  5. Add the roasted poblano strips, corn, black beans, cumin, salt, and black pepper to the skillet. Stir to combine and cook for another 3-4 minutes until heated through.
  6. Roll out the whole wheat pizza dough on a floured surface to your desired thickness. Transfer the dough to a baking sheet lined with parchment paper.
  7. Spread the poblano mixture evenly over the pizza dough.
  8. Sprinkle shredded mozzarella cheese on top of the mixture.
  9. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden.
  10. Remove from the oven and let it cool for a minute. Drizzle Greek yogurt over the top and garnish with fresh cilantro before slicing and serving.
