Ingredients
- Whole wheat pizza dough - 250 grams
- Poblano peppers - 2 medium
- Onion - 1 small, sliced
- Corn - 100 grams, drained
- Black beans - 100 grams, rinsed and drained
- Shredded mozzarella cheese - 100 grams
- Low-fat Greek yogurt - 50 grams
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- Roast the poblano peppers on a grill or directly over a flame until charred on all sides. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes.
- While the peppers are steaming, heat olive oil in a skillet over medium heat. Add sliced onion and sauté until translucent, about 5 minutes.
- Remove the skins from the poblanos, slice them open, and remove the seeds. Cut into strips.
- Add the roasted poblano strips, corn, black beans, cumin, salt, and black pepper to the skillet. Stir to combine and cook for another 3-4 minutes until heated through.
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness. Transfer the dough to a baking sheet lined with parchment paper.
- Spread the poblano mixture evenly over the pizza dough.
- Sprinkle shredded mozzarella cheese on top of the mixture.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden.
- Remove from the oven and let it cool for a minute. Drizzle Greek yogurt over the top and garnish with fresh cilantro before slicing and serving.
