- Red bell pepper - 1 medium, diced
- Green onions - 2 stalks, chopped
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the black beans, cherry tomatoes, red bell pepper, green onions, cumin, chili powder, and salt.
- Lay the whole wheat tortillas on a baking sheet and brush them lightly with olive oil.
