  • Black beans - 100 grams, rinsed and drained
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1 medium, diced
  • Green onions - 2 stalks, chopped
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine the black beans, cherry tomatoes, red bell pepper, green onions, cumin, chili powder, and salt.
  3. Lay the whole wheat tortillas on a baking sheet and brush them lightly with olive oil.
  4. Spread the bean and vegetable mixture evenly over each tortilla.
  5. Crumble the queso fresco on top of the vegetable mixture.
  6. Bake in the preheated oven for 10-12 minutes, or until the tortillas are crisp and the cheese is slightly melted.
