- 200 grams grilled chicken breast, shredded
- 100 grams refried black beans
- 100 grams mozzarella cheese, shredded
- 50 grams queso fresco, crumbled
- 1 medium tomato, diced
- 1 small red onion, thinly sliced
- 1 jalapeño, sliced
- 1/2 avocado, sliced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt to taste
- Black pepper to taste
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the shredded grilled chicken with cumin, chili powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add the sliced red onion and jalapeño, cooking until softened, about 3-4 minutes.
- Spread a layer of refried black beans on each corn tortilla and place them on a baking sheet.
- Top each tortilla with the seasoned chicken, sautéed onions and jalapeños, shredded mozzarella, and crumbled queso fresco.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and add diced tomatoes, avocado slices, and fresh cilantro on top.
- Let cool for a few minutes before slicing and serving.
