  • 2 large corn tortillas

  • 100 grams refried black beans
  • 100 grams mozzarella cheese, shredded
  • 50 grams queso fresco, crumbled
  • 1 medium tomato, diced
  • 1 small red onion, thinly sliced
  • 1 jalapeño, sliced
  • 1/2 avocado, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the shredded grilled chicken with cumin, chili powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the sliced red onion and jalapeño, cooking until softened, about 3-4 minutes.
  4. Spread a layer of refried black beans on each corn tortilla and place them on a baking sheet.
  5. Top each tortilla with the seasoned chicken, sautéed onions and jalapeños, shredded mozzarella, and crumbled queso fresco.
  6. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and add diced tomatoes, avocado slices, and fresh cilantro on top.
