- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Olive oil - 2 tablespoons
- Egg - 1 large
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Ground cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cooked chicken breast, shredded - 200 grams
- Pineapple, diced - 50 grams
- Red onion, thinly sliced - 50 grams
- Cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Avocado, sliced - 1 small
Steps
- Preheat your oven to 220°C (425°F).
- In a mixing bowl, combine almond flour, coconut flour, olive oil, egg, salt, pepper, cumin, and paprika. Mix until a dough forms.
- On a parchment-lined baking sheet, shape the dough into two round pizza crusts, about 1/4 inch thick.
- Bake the crusts in the preheated oven for 10-12 minutes, until golden and firm.
- While the crusts are baking, in a separate bowl, mix the shredded chicken with lime juice, pineapple, red onion, and chopped cilantro.
- Once the crusts are done, remove them from the oven and evenly distribute the chicken mixture on top of each crust.
- Return the pizzas to the oven and bake for an additional 8-10 minutes until heated through.
- Remove from the oven and top with avocado slices before serving.
