- Whole wheat tortillas - 2
- Cooked chicken breast, shredded - 200 grams
- Black beans, rinsed and drained - 100 grams
- Red bell pepper, diced - 50 grams
- Red onion, thinly sliced - 30 grams
- Corn kernels, fresh or frozen - 50 grams
- Fresh cilantro, chopped - 2 tablespoons
- Low-fat mozzarella cheese, shredded - 100 grams
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lime wedges - for serving
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the shredded chicken with black beans, diced red bell pepper, sliced red onion, corn, chopped cilantro, cumin, chili powder, salt, and black pepper.
- Brush one side of each tortilla with olive oil and place them on a baking sheet, oil side down.
- Spread the chicken and vegetable mixture evenly over the tortillas.
- Sprinkle the shredded mozzarella cheese on top of the chicken mixture.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes before slicing.
- Serve with lime wedges on the side for an extra burst of flavor.
