Ingredients

  • Whole wheat tortillas - 2
  • Cooked chicken breast, shredded - 200 grams
  • Black beans, rinsed and drained - 100 grams
  • Red bell pepper, diced - 50 grams
  • Red onion, thinly sliced - 30 grams
  • Corn kernels, fresh or frozen - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Low-fat mozzarella cheese, shredded - 100 grams
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime wedges - for serving

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the shredded chicken with black beans, diced red bell pepper, sliced red onion, corn, chopped cilantro, cumin, chili powder, salt, and black pepper.
  3. Brush one side of each tortilla with olive oil and place them on a baking sheet, oil side down.
  4. Spread the chicken and vegetable mixture evenly over the tortillas.
  5. Sprinkle the shredded mozzarella cheese on top of the chicken mixture.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a couple of minutes before slicing.
  8. Serve with lime wedges on the side for an extra burst of flavor.
