Ingredients

  • Whole wheat tortilla - 2 pieces
  • Roasted red bell pepper - 1 large
  • Olive oil - 1 tablespoon
  • Fresh mozzarella cheese - 100 grams, sliced
  • Fresh basil leaves - 10 leaves
  • Cherry tomatoes - 100 grams, halved
  • Garlic - 1 clove, minced
  • Oregano - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Roast the red bell pepper by placing it directly on the oven rack or on a baking sheet for about 20 minutes until the skin is charred and blistered. Once done, place it in a bowl and cover with plastic wrap to steam for 10 minutes.
  3. While the bell pepper is steaming, prepare the whole wheat tortillas by brushing each side lightly with olive oil.
  4. Place the tortillas on a baking sheet and sprinkle the minced garlic, oregano, salt, and black pepper evenly over them.
  5. After the red bell pepper has steamed, peel off the charred skin and remove the seeds. Slice the pepper into strips.
  6. Layer the mozzarella cheese slices evenly on the tortillas, followed by the roasted red pepper strips and halved cherry tomatoes.
  7. Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly.
  8. Once out of the oven, garnish with fresh basil leaves before slicing and serving.
