- Whole wheat tortilla - 2 pieces
- Roasted red bell pepper - 1 large
- Olive oil - 1 tablespoon
- Fresh mozzarella cheese - 100 grams, sliced
- Fresh basil leaves - 10 leaves
- Cherry tomatoes - 100 grams, halved
- Garlic - 1 clove, minced
- Oregano - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Roast the red bell pepper by placing it directly on the oven rack or on a baking sheet for about 20 minutes until the skin is charred and blistered. Once done, place it in a bowl and cover with plastic wrap to steam for 10 minutes.
- While the bell pepper is steaming, prepare the whole wheat tortillas by brushing each side lightly with olive oil.
- Place the tortillas on a baking sheet and sprinkle the minced garlic, oregano, salt, and black pepper evenly over them.
- After the red bell pepper has steamed, peel off the charred skin and remove the seeds. Slice the pepper into strips.
- Layer the mozzarella cheese slices evenly on the tortillas, followed by the roasted red pepper strips and halved cherry tomatoes.
- Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly.
- Once out of the oven, garnish with fresh basil leaves before slicing and serving.
