Ingredients

  • Gluten-free pizza crust - 2 pieces (about 200g total)
  • Pork shoulder - 200g, diced
  • Achiote paste - 30g
  • Orange juice - 60ml
  • Lime juice - 15ml
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Red onion - 50g, thinly sliced
  • Fresh cilantro - 10g, chopped
  • Cotija cheese - 30g, crumbled
  • Avocado - 1 small, sliced
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine the diced pork, achiote paste, orange juice, lime juice, minced garlic, salt, and pepper. Mix well and marinate for at least 30 minutes.
  2. Preheat the oven to 220°C (425°F).
  3. Heat olive oil in a skillet over medium heat. Add the marinated pork and cook for about 10-15 minutes, until the pork is cooked through and tender.
  4. While the pork is cooking, prepare the gluten-free pizza crusts according to package instructions.
  5. Once the pork is done, spread it evenly over the prepared pizza crusts.
  6. Top the pizzas with sliced red onion, crumbled Cotija cheese, and fresh cilantro.
  7. Bake in the preheated oven for about 10-12 minutes, or until the edges of the crust are golden brown.
  8. Remove the pizzas from the oven and top with sliced avocado before serving.
