- Gluten-free pizza crust - 2 pieces (about 200g total)
- Pork shoulder - 200g, diced
- Achiote paste - 30g
- Orange juice - 60ml
- Lime juice - 15ml
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Red onion - 50g, thinly sliced
- Fresh cilantro - 10g, chopped
- Cotija cheese - 30g, crumbled
- Avocado - 1 small, sliced
- Olive oil - 1 tablespoon
Steps
- In a bowl, combine the diced pork, achiote paste, orange juice, lime juice, minced garlic, salt, and pepper. Mix well and marinate for at least 30 minutes.
- Preheat the oven to 220°C (425°F).
- Heat olive oil in a skillet over medium heat. Add the marinated pork and cook for about 10-15 minutes, until the pork is cooked through and tender.
- While the pork is cooking, prepare the gluten-free pizza crusts according to package instructions.
- Once the pork is done, spread it evenly over the prepared pizza crusts.
- Top the pizzas with sliced red onion, crumbled Cotija cheese, and fresh cilantro.
- Bake in the preheated oven for about 10-12 minutes, or until the edges of the crust are golden brown.
- Remove the pizzas from the oven and top with sliced avocado before serving.
