- Whole wheat pita bread - 2 pieces
- White fish fillets (tilapia or cod) - 200 grams
- Olive oil - 2 tablespoons
- Lime juice - 2 tablespoons
- Garlic (minced) - 2 cloves
- Cilantro (chopped) - 2 tablespoons
- Red onion (thinly sliced) - 1 small
- Cherry tomatoes (halved) - 100 grams
- Avocado (sliced) - 1 small
- Shredded cheese (Mexican blend) - 100 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the fish fillets, olive oil, lime juice, minced garlic, salt, and pepper. Marinate for 10 minutes.
- While the fish is marinating, place the pita breads on a baking sheet and sprinkle half of the shredded cheese on each.
- Bake the pita breads for 5 minutes to slightly crisp them up.
- Remove the pita breads from the oven and top them with the marinated fish, followed by red onion slices, cherry tomatoes, and the remaining cheese.
- Return to the oven and bake for an additional 10-12 minutes, or until the fish is cooked through and the cheese is melted and bubbly.
- Once cooked, remove the pizzas from the oven and garnish with fresh cilantro and avocado slices.
