Ingredients

  • Nopales (cactus paddles) - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 150 grams, shredded
  • Red onion - 1/2 small, thinly sliced
  • Bell pepper (any color) - 1/2, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced

Steps

  1. Start by preparing the nopales: rinse them under cold water, then remove any thorns and slice them into 1/2-inch strips.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the nopales for about 5-7 minutes until they are tender and slightly translucent.
  3. Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant. Season with salt, black pepper, and oregano.
  4. Remove the nopales from the skillet and set them aside. In the same skillet, add another tablespoon of olive oil and heat it up.
  5. Spread the tomato sauce evenly on each nopal paddle. Top with sautéed nopales, shredded mozzarella cheese, red onion, and bell pepper slices.
  6. Cook each nopal pizza in the skillet over low heat, covered, for about 10-12 minutes until the cheese has melted and is bubbly.
  7. Once done, remove from heat and drizzle with lime juice and sprinkle chopped cilantro on top before serving.
