Ingredients

  • Nopal cactus paddles - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cooked chicken breast, shredded - 150 grams
  • Black beans, drained and rinsed - 1/2 cup
  • Cherry tomatoes, halved - 1/2 cup
  • Red onion, diced - 1/4 cup
  • Fresh cilantro, chopped - 2 tablespoons
  • Avocado, sliced - 1 small
  • Shredded low-fat cheese (like mozzarella) - 1/2 cup
  • Lime wedges - 1 for serving

Steps

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. While the grill is heating, prepare the nopal paddles by rinsing them under cold water and trimming the edges. Pat dry.
  3. Brush both sides of the nopal paddles with olive oil and sprinkle with salt and black pepper.
  4. Grill the nopal paddles for about 5-7 minutes on each side, until they have nice grill marks and are tender. Remove from heat and set aside.
  5. On each grilled nopal paddle, layer shredded chicken, black beans, halved cherry tomatoes, diced red onion, and a sprinkle of shredded cheese.
  6. Return the topped nopal paddles to the grill for an additional 5 minutes, or until the cheese is melted.
  7. Remove from the grill, garnish with chopped cilantro and avocado slices, and serve with lime wedges on the side.
