- Nopal cactus paddles - 2 medium-sized
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cooked chicken breast, shredded - 150 grams
- Black beans, drained and rinsed - 1/2 cup
- Cherry tomatoes, halved - 1/2 cup
- Red onion, diced - 1/4 cup
- Fresh cilantro, chopped - 2 tablespoons
- Avocado, sliced - 1 small
- Shredded low-fat cheese (like mozzarella) - 1/2 cup
- Lime wedges - 1 for serving
Steps
- Preheat your grill or stovetop grill pan over medium heat.
- While the grill is heating, prepare the nopal paddles by rinsing them under cold water and trimming the edges. Pat dry.
- Brush both sides of the nopal paddles with olive oil and sprinkle with salt and black pepper.
- Grill the nopal paddles for about 5-7 minutes on each side, until they have nice grill marks and are tender. Remove from heat and set aside.
- On each grilled nopal paddle, layer shredded chicken, black beans, halved cherry tomatoes, diced red onion, and a sprinkle of shredded cheese.
- Return the topped nopal paddles to the grill for an additional 5 minutes, or until the cheese is melted.
- Remove from the grill, garnish with chopped cilantro and avocado slices, and serve with lime wedges on the side.
