  • Red onion - 1/2 medium, thinly sliced
  • Corn kernels - 100 grams (fresh or frozen)
  • Black beans - 100 grams, drained and rinsed
  • Reduced-fat mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet lined with parchment paper.
  3. Spread the mole sauce evenly over the pizza dough, leaving a small border around the edges.
  4. In a mixing bowl, combine sliced zucchini, red bell pepper, red onion, corn, black beans, olive oil, salt, and pepper. Toss to coat the vegetables evenly.
  5. Spread the vegetable mixture over the mole sauce on the pizza.
  6. Sprinkle the shredded mozzarella cheese evenly over the top.
  7. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden brown and the cheese is melted.
  8. Remove from the oven and garnish with fresh cilantro.
