Ingredients

  • Cornmeal - 150g
  • Warm water - 200ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black beans - 100g, cooked and drained
  • Cherry tomatoes - 100g, halved
  • Red onion - 50g, thinly sliced
  • Bell pepper - 50g, diced
  • Corn kernels - 100g, fresh or frozen
  • Avocado - 1 medium, ripe
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine cornmeal, warm water, olive oil, and salt to form a dough. Knead briefly until smooth.
  3. Divide the dough into two equal portions and flatten each into a circle about 1 cm thick.
  4. Place the dough circles on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 10-12 minutes or until lightly golden.
  6. In a mixing bowl, combine black beans, cherry tomatoes, red onion, bell pepper, corn, cumin, chili powder, and black pepper. Mix well.
  7. Remove the pizza bases from the oven and top each with the vegetable mixture evenly.
  8. Return the pizzas to the oven and bake for an additional 10 minutes.
  9. While the pizzas are baking, prepare the avocado crema by blending avocado, lime juice, and cilantro until smooth. Season with salt to taste.
  10. Once the pizzas are done, remove them from the oven and drizzle with the avocado crema before serving.
