Ingredients
- Cornmeal - 150g
- Warm water - 200ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black beans - 100g, cooked and drained
- Cherry tomatoes - 100g, halved
- Red onion - 50g, thinly sliced
- Bell pepper - 50g, diced
- Corn kernels - 100g, fresh or frozen
- Avocado - 1 medium, ripe
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine cornmeal, warm water, olive oil, and salt to form a dough. Knead briefly until smooth.
- Divide the dough into two equal portions and flatten each into a circle about 1 cm thick.
- Place the dough circles on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes or until lightly golden.
- In a mixing bowl, combine black beans, cherry tomatoes, red onion, bell pepper, corn, cumin, chili powder, and black pepper. Mix well.
- Remove the pizza bases from the oven and top each with the vegetable mixture evenly.
- Return the pizzas to the oven and bake for an additional 10 minutes.
- While the pizzas are baking, prepare the avocado crema by blending avocado, lime juice, and cilantro until smooth. Season with salt to taste.
- Once the pizzas are done, remove them from the oven and drizzle with the avocado crema before serving.
