- Bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Avocado - 1, sliced
Steps
- Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- Add the sliced red onion and cook until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
- In a bowl, combine the diced jitomate, chopped cilantro, lime juice, salt, and black pepper. Mix well.
- Place the whole wheat tortillas in the skillet, one at a time, allowing them to warm for 1-2 minutes on each side.
- Spread the jitomate mixture evenly over each tortilla.
- Top with the sautéed onion and bell pepper mixture.
- Drizzle with the remaining tablespoon of olive oil and allow the pizzas to cook for an additional 3-5 minutes, until the edges are crispy.
- Remove from heat and top with sliced avocado before serving.
