  • Whole wheat tortillas - 2
  • Fresh jitomate (tomatoes) - 4 medium, diced
  • Red onion - 1/2, thinly sliced
  • Bell pepper - 1, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cilantro - 1/4 cup, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced
  • Avocado - 1, sliced

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Add the sliced red onion and cook until it becomes translucent, about 3-4 minutes.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
  4. In a bowl, combine the diced jitomate, chopped cilantro, lime juice, salt, and black pepper. Mix well.
  5. Place the whole wheat tortillas in the skillet, one at a time, allowing them to warm for 1-2 minutes on each side.
  6. Spread the jitomate mixture evenly over each tortilla.
  7. Top with the sautéed onion and bell pepper mixture.
  8. Drizzle with the remaining tablespoon of olive oil and allow the pizzas to cook for an additional 3-5 minutes, until the edges are crispy.
  9. Remove from heat and top with sliced avocado before serving.
