- Black beans - 200 grams, canned, drained and rinsed
- Red onion - 50 grams, finely chopped
- Bell pepper - 50 grams, diced
- Corn kernels - 50 grams, canned or frozen
- Mexican cheese blend - 100 grams, shredded
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 10 grams, chopped (for garnish)
- Avocado - 1 small, sliced (for serving)
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, mash the black beans with a fork until mostly smooth, leaving some texture.
- Add the chopped red onion, diced bell pepper, corn kernels, ground cumin, chili powder, salt, and black pepper to the mashed beans. Mix well to combine.
- Heat the olive oil in a skillet over medium heat. Lightly fry each corn tortilla for about 1 minute on each side until they are slightly crispy.
- Place the fried tortillas on a baking sheet. Spread the bean mixture evenly over each tortilla.
- Sprinkle the shredded Mexican cheese blend generously over the top of each pizza.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute. Garnish with fresh cilantro and serve with sliced avocado on the side.
