Ingredients

  • Cornmeal - 1 cup
  • All-purpose flour - 1/2 cup
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 3/4 cup
  • Olive oil - 1 tablespoon
  • Fresh spinach - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Red onion - 1/2, thinly sliced
  • Bell pepper - 1/2, diced
  • Oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Mozzarella cheese - 150 grams, shredded
  • Cotija cheese - 50 grams, crumbled
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. Gradually add water and olive oil, mixing until a dough forms.
  4. Knead the dough for a couple of minutes until smooth, then let it rest for 10 minutes.
  5. While the dough is resting, heat a large skillet over medium heat and add a splash of olive oil.
  6. Sauté garlic and red onion for about 2 minutes until fragrant.
  7. Add the chopped spinach, bell pepper, oregano, cumin, and chili powder to the skillet, cooking until the spinach is wilted, about 5 minutes.
  8. Roll out the dough on a floured surface to form two pizza bases.
  9. Place the rolled-out bases on a baking sheet lined with parchment paper.
  10. Spread the sautéed vegetable mixture evenly over the bases.
  11. Sprinkle mozzarella and cotija cheese on top of the vegetables.
  12. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbling.
  13. Remove from the oven, garnish with fresh cilantro, and serve with lime wedges.
