- Fresh spinach - 200 grams, chopped
- Garlic - 2 cloves, minced
- Red onion - 1/2, thinly sliced
- Bell pepper - 1/2, diced
- Oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Mozzarella cheese - 150 grams, shredded
- Cotija cheese - 50 grams, crumbled
- Fresh cilantro - for garnish
- Lime wedges - for serving
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
- Gradually add water and olive oil, mixing until a dough forms.
- Knead the dough for a couple of minutes until smooth, then let it rest for 10 minutes.
- While the dough is resting, heat a large skillet over medium heat and add a splash of olive oil.
- Sauté garlic and red onion for about 2 minutes until fragrant.
- Add the chopped spinach, bell pepper, oregano, cumin, and chili powder to the skillet, cooking until the spinach is wilted, about 5 minutes.
- Roll out the dough on a floured surface to form two pizza bases.
- Place the rolled-out bases on a baking sheet lined with parchment paper.
- Spread the sautéed vegetable mixture evenly over the bases.
- Sprinkle mozzarella and cotija cheese on top of the vegetables.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbling.
- Remove from the oven, garnish with fresh cilantro, and serve with lime wedges.
