  • Lime - 1, juiced

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, baking powder, and salt.
  3. Add olive oil and water to the dry ingredients, mixing until a dough forms. If the dough is too sticky, add a bit more flour.
  4. Divide the dough into two equal portions and shape each into a round pizza crust on a baking sheet lined with parchment paper.
  5. Bake the crusts in the preheated oven for about 10 minutes, or until lightly golden.
  6. Remove the crusts from the oven and sprinkle mozzarella cheese evenly over each crust.
  7. Top with diced red bell pepper, green onion, jalapeño (if using), and crumbled queso fresco.
  8. Return the pizzas to the oven and bake for an additional 10-12 minutes, until the cheese is bubbly and golden.
  9. Remove from the oven and sprinkle with chopped cilantro and a squeeze of lime juice before serving.
