- Lime - 1, juiced
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, baking powder, and salt.
- Add olive oil and water to the dry ingredients, mixing until a dough forms. If the dough is too sticky, add a bit more flour.
- Divide the dough into two equal portions and shape each into a round pizza crust on a baking sheet lined with parchment paper.
- Bake the crusts in the preheated oven for about 10 minutes, or until lightly golden.
- Remove the crusts from the oven and sprinkle mozzarella cheese evenly over each crust.
- Top with diced red bell pepper, green onion, jalapeño (if using), and crumbled queso fresco.
- Return the pizzas to the oven and bake for an additional 10-12 minutes, until the cheese is bubbly and golden.
- Remove from the oven and sprinkle with chopped cilantro and a squeeze of lime juice before serving.
