Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Fresh cilantro - 50 grams
  • Garlic - 1 clove
  • Lemon juice - 15 ml
  • Parmesan cheese - 30 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 50 grams
  • Bell pepper - 50 grams
  • Mozzarella cheese - 100 grams

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, and knead the dough for about 5-7 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes or until it doubles in size.
  4. While the dough is rising, prepare the cilantro pesto by blending cilantro, garlic, lemon juice, and Parmesan cheese in a food processor until smooth.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, divide it into two equal portions and roll each one out into a circle about 25 cm in diameter.
  7. Spread a generous layer of cilantro pesto over each pizza base.
  8. Slice the cherry tomatoes, red onion, and bell pepper, and distribute them evenly over the pesto.
  9. Top each pizza with shredded mozzarella cheese.
  10. Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbly.
  11. Remove from the oven, let cool for a few minutes, slice, and serve warm.
