- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Fresh cilantro - 50 grams
- Garlic - 1 clove
- Lemon juice - 15 ml
- Parmesan cheese - 30 grams
- Cherry tomatoes - 100 grams
- Red onion - 50 grams
- Bell pepper - 50 grams
- Mozzarella cheese - 100 grams
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, and knead the dough for about 5-7 minutes until smooth.
- Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes or until it doubles in size.
- While the dough is rising, prepare the cilantro pesto by blending cilantro, garlic, lemon juice, and Parmesan cheese in a food processor until smooth.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions and roll each one out into a circle about 25 cm in diameter.
- Spread a generous layer of cilantro pesto over each pizza base.
- Slice the cherry tomatoes, red onion, and bell pepper, and distribute them evenly over the pesto.
- Top each pizza with shredded mozzarella cheese.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbly.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
