Ingredients

  • Whole wheat tortilla - 2 pieces
  • Chorizo sausage - 150 grams, crumbled
  • Shredded mozzarella cheese - 100 grams
  • Sliced bell pepper - 50 grams
  • Diced onion - 50 grams
  • Chopped fresh cilantro - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Sour cream - 2 tablespoons
  • Salsa - 50 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet over medium heat, add the olive oil and crumble the chorizo sausage into the pan, cooking until browned and cooked through, about 5-7 minutes.
  3. Remove the chorizo from the skillet and set aside, leaving any rendered fat in the pan.
  4. In the same skillet, add the diced onion and sliced bell pepper, cooking until softened, about 3-4 minutes. Season with salt and black pepper.
  5. On a baking sheet, place the whole wheat tortillas and evenly distribute the cooked chorizo over each tortilla.
  6. Top with the sautéed vegetables and sprinkle shredded mozzarella cheese generously over both pizzas.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, sprinkle with fresh cilantro, and serve with sour cream and salsa on the side.
