- Sliced bell pepper - 50 grams
- Diced onion - 50 grams
- Chopped fresh cilantro - 2 tablespoons
- Olive oil - 1 tablespoon
- Sour cream - 2 tablespoons
- Salsa - 50 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet over medium heat, add the olive oil and crumble the chorizo sausage into the pan, cooking until browned and cooked through, about 5-7 minutes.
- Remove the chorizo from the skillet and set aside, leaving any rendered fat in the pan.
- In the same skillet, add the diced onion and sliced bell pepper, cooking until softened, about 3-4 minutes. Season with salt and black pepper.
- On a baking sheet, place the whole wheat tortillas and evenly distribute the cooked chorizo over each tortilla.
