- Cornmeal - 50 grams
- Active dry yeast - 5 grams
- Warm water - 100 ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Chipotle peppers in adobo sauce - 2 peppers, chopped
- Tomato sauce - 100 ml
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Bell pepper - 1, sliced
- Red onion - 1/2, thinly sliced
- Fresh cilantro - a handful, chopped
- Avocado - 1, sliced
Steps
- In a small bowl, mix warm water and active dry yeast. Let it sit for 5 minutes until frothy.
- In a large bowl, combine the all-purpose flour, cornmeal, and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 15 minutes.
- While the dough is rising, prepare the chipotle sauce by blending chopped chipotle peppers with tomato sauce, garlic powder, and onion powder until smooth.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions and roll each out into a 25 cm (10 inch) round pizza crust.
- Place the crusts on a baking sheet lined with parchment paper. Spread the chipotle sauce evenly over each crust.
- Top with sliced bell pepper and red onion.
- Bake in the preheated oven for 10-12 minutes until the crust is golden and crispy.
- Remove from the oven, garnish with fresh cilantro and avocado slices, and serve hot.
