Ingredients

  • All-purpose flour - 150 grams
  • Cornmeal - 50 grams
  • Active dry yeast - 5 grams
  • Warm water - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Chipotle peppers in adobo sauce - 2 peppers, chopped
  • Tomato sauce - 100 ml
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Bell pepper - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Fresh cilantro - a handful, chopped
  • Avocado - 1, sliced

Steps

  1. In a small bowl, mix warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large bowl, combine the all-purpose flour, cornmeal, and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 15 minutes.
  4. While the dough is rising, prepare the chipotle sauce by blending chopped chipotle peppers with tomato sauce, garlic powder, and onion powder until smooth.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, divide it into two equal portions and roll each out into a 25 cm (10 inch) round pizza crust.
  7. Place the crusts on a baking sheet lined with parchment paper. Spread the chipotle sauce evenly over each crust.
  8. Top with sliced bell pepper and red onion.
  9. Bake in the preheated oven for 10-12 minutes until the crust is golden and crispy.
  10. Remove from the oven, garnish with fresh cilantro and avocado slices, and serve hot.
