Ingredients
- Poblano peppers - 2 large
- Olive oil - 2 tablespoons
- Cornmeal - 1/4 cup
- All-purpose flour - 1 cup
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 1/2 cup
- Mozzarella cheese - 150 grams, shredded
- Fresh corn - 1/2 cup (cooked or canned)
- Red onion - 1/4 cup, thinly sliced
- Cherry tomatoes - 1/2 cup, halved
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Avocado - 1 small, sliced
Steps
- Preheat your oven to 220°C (430°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally until the skin is charred. Remove from the oven, place in a bowl, cover with plastic wrap, and let steam for 10 minutes.
- In a mixing bowl, combine the cornmeal, flour, baking powder, and salt. Gradually add water and mix until a dough forms. Knead for a minute until smooth.
- Divide the dough into two equal portions and roll each into a circle about 1/2 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Brush with olive oil and bake for 5-7 minutes until lightly golden.
- While the dough is baking, peel the roasted poblano peppers and remove the seeds. Cut them into strips.
- Remove the crusts from the oven, then evenly distribute the shredded mozzarella cheese over each base. Top with roasted poblano strips, corn, red onion, and cherry tomatoes.
- Return the pizzas to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly.
- Once done, remove from the oven and sprinkle with fresh cilantro. Serve with lime wedges and slices of avocado.
