Ingredients

  • Poblano peppers - 2 large
  • Olive oil - 2 tablespoons
  • Cornmeal - 1/4 cup
  • All-purpose flour - 1 cup
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1/2 cup
  • Mozzarella cheese - 150 grams, shredded
  • Fresh corn - 1/2 cup (cooked or canned)
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1/2 cup, halved
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1 small, sliced

Steps

  1. Preheat your oven to 220°C (430°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally until the skin is charred. Remove from the oven, place in a bowl, cover with plastic wrap, and let steam for 10 minutes.
  3. In a mixing bowl, combine the cornmeal, flour, baking powder, and salt. Gradually add water and mix until a dough forms. Knead for a minute until smooth.
  4. Divide the dough into two equal portions and roll each into a circle about 1/2 cm thick.
  5. Place the rolled dough on a baking sheet lined with parchment paper. Brush with olive oil and bake for 5-7 minutes until lightly golden.
  6. While the dough is baking, peel the roasted poblano peppers and remove the seeds. Cut them into strips.
  7. Remove the crusts from the oven, then evenly distribute the shredded mozzarella cheese over each base. Top with roasted poblano strips, corn, red onion, and cherry tomatoes.
  8. Return the pizzas to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly.
  9. Once done, remove from the oven and sprinkle with fresh cilantro. Serve with lime wedges and slices of avocado.
