- Chayote - 2 medium
- Olive oil - 2 tablespoons
- Red bell pepper - 1 small, diced
- Yellow onion - 1 small, diced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 100 grams
- Shredded mozzarella cheese - 150 grams
- Fresh basil leaves - a handful, for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Cut the chayotes in half lengthwise and scoop out the seed from the center using a spoon.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and zucchini to the skillet, cooking for another 5 minutes or until the vegetables are tender. Season with oregano, salt, and black pepper.
- Place the chayote halves on a baking sheet, cut side up. Spread a thin layer of tomato sauce on each half.
- Top the chayote with the sautéed vegetable mixture, then sprinkle generously with shredded mozzarella cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil leaves, and let cool slightly before serving.
