Ingredients

  • Corn tortillas - 2
  • Olive oil - 2 tablespoons
  • Fresh mushrooms (button or cremini) - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1 small, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Shredded mozzarella cheese - 100 grams
  • Sour cream - for serving (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced red bell pepper, and sliced mushrooms to the skillet. Cook until the mushrooms are tender and most of the moisture has evaporated, about 5-7 minutes.
  4. Stir in the cumin, oregano, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.
  5. On a baking sheet, place the corn tortillas and evenly distribute the mushroom mixture on top of each tortilla.
  6. Sprinkle the shredded mozzarella cheese over the mushroom mixture on each tortilla.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped fresh cilantro before serving. Serve hot with a dollop of sour cream if desired.
