- Corn tortillas - 2
- Olive oil - 2 tablespoons
- Fresh mushrooms (button or cremini) - 200 grams, sliced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1 small, diced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Shredded mozzarella cheese - 100 grams
- Sour cream - for serving (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced red bell pepper, and sliced mushrooms to the skillet. Cook until the mushrooms are tender and most of the moisture has evaporated, about 5-7 minutes.
- Stir in the cumin, oregano, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.
- On a baking sheet, place the corn tortillas and evenly distribute the mushroom mixture on top of each tortilla.
- Sprinkle the shredded mozzarella cheese over the mushroom mixture on each tortilla.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped fresh cilantro before serving. Serve hot with a dollop of sour cream if desired.
