Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Pork shoulder - 250 grams (Halal certified)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Lime juice - 15 ml
  • Mozzarella cheese - 100 grams, shredded
  • Red onion - 50 grams, thinly sliced
  • Cilantro - 10 grams, chopped
  • Crema or sour cream - for drizzling

Steps

  1. In a bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for 30 minutes.
  4. While the dough is rising, prepare the carnitas. In a pot, add pork shoulder, cumin, chili powder, garlic powder, onion powder, and lime juice. Cover with water and simmer on low heat for about 45 minutes until tender.
  5. Once the pork is cooked, shred it using two forks and set it aside.
  6. Preheat the oven to 220°C (428°F).
  7. Divide the risen dough into two equal portions and roll each out into a 25 cm (10 inch) round pizza base.
  8. Place the rolled out bases on baking sheets lined with parchment paper.
  9. Spread a layer of shredded carnitas over each pizza base, then top with shredded mozzarella and sliced red onion.
  10. Bake in the preheated oven for 12-15 minutes until the crust is golden and the cheese is bubbly.
  11. Remove from the oven and sprinkle with chopped cilantro and drizzle with crema before serving.
