Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1/2 medium
  • Red onion (diced) - 1/2 medium
  • Jalapeño (diced) - 1 small
  • Cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Avocado (sliced) - 1/2 medium

Steps

  1. Preheat the oven to 220°C (425°F).
  2. To prepare the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let it cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
  4. In a mixing bowl, combine the cauliflower, almond flour, egg, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a lined baking sheet, forming two pizza crusts. Bake for 15-20 minutes until golden brown.
  6. While the crusts are baking, heat olive oil in a skillet over medium heat. Add minced garlic, diced red onion, bell pepper, and jalapeño; sauté for 3-4 minutes until softened.
  7. Add the shrimp to the skillet, cooking for an additional 4-5 minutes until they turn pink and opaque. Stir in lime juice and cilantro, then remove from heat.
  8. Once the crusts are done, remove them from the oven and evenly distribute the shrimp and vegetable mixture on top.
  9. Return the pizzas to the oven for another 5 minutes to heat through, then remove and let cool slightly.
  10. Top with sliced avocado before serving.
