Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Shrimp (peeled and deveined) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Red bell pepper (diced) - 1/2 medium
- Red onion (diced) - 1/2 medium
- Jalapeño (diced) - 1 small
- Cilantro (chopped) - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Avocado (sliced) - 1/2 medium
Steps
- Preheat the oven to 220°C (425°F).
- To prepare the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let it cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the cauliflower, almond flour, egg, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a lined baking sheet, forming two pizza crusts. Bake for 15-20 minutes until golden brown.
- While the crusts are baking, heat olive oil in a skillet over medium heat. Add minced garlic, diced red onion, bell pepper, and jalapeño; sauté for 3-4 minutes until softened.
- Add the shrimp to the skillet, cooking for an additional 4-5 minutes until they turn pink and opaque. Stir in lime juice and cilantro, then remove from heat.
- Once the crusts are done, remove them from the oven and evenly distribute the shrimp and vegetable mixture on top.
- Return the pizzas to the oven for another 5 minutes to heat through, then remove and let cool slightly.
- Top with sliced avocado before serving.
