Ingredients

  • Garlic, minced - 2 cloves
  • Lime juice - 1 tablespoon
  • Cilantro, chopped - 1/4 cup
  • Red onion, thinly sliced - 1/4 cup
  • Mozzarella cheese, shredded - 100 grams
  • Queso fresco, crumbled - 50 grams
  • Jalapeño, sliced - 1 tablespoon
  • Avocado, sliced - 1/2 (for topping)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine chickpea flour, water, 1 tablespoon of olive oil, and salt to form a smooth batter.
  3. Pour the batter onto a parchment-lined baking sheet, spreading it into two round pizza shapes about 1/2 inch thick.
  4. Bake the crusts in the preheated oven for 10-12 minutes until golden and firm.
  5. While the crusts are baking, heat the remaining olive oil in a skillet over medium heat.
  6. Add minced garlic and sauté for 1 minute until fragrant, then add the shrimp, lime juice, and half of the cilantro.
  7. Cook the shrimp for about 4-5 minutes until they are pink and opaque, stirring occasionally.
  8. Remove the crusts from the oven and top each with the cooked shrimp, red onion slices, mozzarella cheese, and jalapeño.
  9. Return the pizzas to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
  10. Remove from the oven, sprinkle with crumbled queso fresco, and garnish with the remaining cilantro and avocado slices before serving.
