- Queso fresco, crumbled - 50 grams
- Jalapeño, sliced - 1 tablespoon
- Avocado, sliced - 1/2 (for topping)
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine chickpea flour, water, 1 tablespoon of olive oil, and salt to form a smooth batter.
- Pour the batter onto a parchment-lined baking sheet, spreading it into two round pizza shapes about 1/2 inch thick.
- Bake the crusts in the preheated oven for 10-12 minutes until golden and firm.
- While the crusts are baking, heat the remaining olive oil in a skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant, then add the shrimp, lime juice, and half of the cilantro.
- Cook the shrimp for about 4-5 minutes until they are pink and opaque, stirring occasionally.
- Remove the crusts from the oven and top each with the cooked shrimp, red onion slices, mozzarella cheese, and jalapeño.
- Return the pizzas to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with crumbled queso fresco, and garnish with the remaining cilantro and avocado slices before serving.
