Steps
- Preheat your oven to 220°C (425°F).
- On a floured surface, roll out the pizza dough into a round shape, about 10-12 inches in diameter.
- Transfer the rolled-out dough to a baking sheet or pizza stone lined with parchment paper.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini, red bell pepper, and onion to the skillet. Sprinkle with oregano, cumin, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender.
- Spread the sautéed vegetables evenly over the pizza dough.
- Sprinkle shredded mozzarella cheese generously on top of the vegetables, followed by crumbled Cotija cheese.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
