  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Cotija cheese - 30 grams, crumbled
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. On a floured surface, roll out the pizza dough into a round shape, about 10-12 inches in diameter.
  3. Transfer the rolled-out dough to a baking sheet or pizza stone lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the sliced zucchini, red bell pepper, and onion to the skillet. Sprinkle with oregano, cumin, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender.
  6. Spread the sautéed vegetables evenly over the pizza dough.
  7. Sprinkle shredded mozzarella cheese generously on top of the vegetables, followed by crumbled Cotija cheese.
  8. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
