Ingredients

  • Zucchini - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1/2, diced
  • Onion - 1/2, diced
  • Corn kernels - 50 grams (fresh or canned)
  • Black olives - 30 grams, sliced
  • Mozzarella cheese - 100 grams, shredded
  • Fresh basil - a handful, chopped
  • Chili flakes - optional, to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and slice the zucchini into 1 cm thick rounds to create the pizza base.
  3. In a mixing bowl, combine the olive oil, salt, black pepper, and garlic powder. Toss the zucchini rounds in this mixture until evenly coated.
  4. Place the zucchini slices on a baking sheet lined with parchment paper, ensuring they do not overlap.
  5. Bake the zucchini in the preheated oven for 10 minutes until slightly tender.
  6. Remove the zucchini from the oven and top each slice with diced onion, red bell pepper, corn, cherry tomatoes, and black olives.
  7. Sprinkle the shredded mozzarella cheese over the top of the vegetable-topped zucchini slices.
  8. Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  9. Once done, remove from the oven and sprinkle with fresh basil and chili flakes if desired.
  10. Allow to cool for a couple of minutes before serving.
