  • Red onion - 1/2, sliced
  • Mushrooms - 100 grams, sliced
  • Corn kernels - 100 grams (fresh or frozen)
  • Oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shredded mozzarella cheese - 150 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Salsa - 4 tablespoons (for serving)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, toss the sliced red bell pepper, zucchini, red onion, mushrooms, and corn with olive oil, oregano, cumin, salt, and black pepper.
  3. Spread the vegetables on a baking tray lined with parchment paper and roast in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.
  4. While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
  6. Sprinkle shredded mozzarella cheese evenly over the dough.
  7. Once the vegetables are done roasting, distribute them evenly over the cheese on the pizza.
