- Shredded mozzarella cheese - 150 grams
- Fresh cilantro - 2 tablespoons, chopped
- Salsa - 4 tablespoons (for serving)
Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, toss the sliced red bell pepper, zucchini, red onion, mushrooms, and corn with olive oil, oregano, cumin, salt, and black pepper.
- Spread the vegetables on a baking tray lined with parchment paper and roast in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
