  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Red bell pepper - 1/2, diced
  • Red onion - 1/4, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Avocado - 1/2, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the tomato sauce, oregano, cumin, salt, and pepper to the saucepan. Simmer for 5 minutes to allow the flavors to meld.
  4. Place the whole wheat tortillas on a baking sheet and spread a generous amount of the red sauce on each tortilla.
  5. Evenly distribute the diced red bell pepper and sliced red onion over the sauce on each tortilla.
  6. Sprinkle the shredded mozzarella cheese on top of the vegetables.
