- Refried black beans - 120 grams
- Queso fresco - 100 grams, crumbled
- Mozzarella cheese - 150 grams, shredded
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Jalapeño - 1 small, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- Rinse the nopal cactus pads under cold water and pat them dry. Grill or cook them in a skillet over medium heat for about 5 minutes on each side until they are tender. Season with salt and black pepper.
- Once cooked, set the nopal pads aside and sprinkle cornmeal on a baking sheet to prevent sticking.
- Spread the refried black beans evenly over the nopal pads as a base.
- Top the beans with shredded mozzarella cheese, crumbled queso fresco, cherry tomatoes, sliced red onion, and jalapeño.
- Drizzle olive oil over the toppings and place the nopal pizza in the preheated oven.
- Bake for about 10-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven, squeeze fresh lime juice over the top, and garnish with chopped cilantro before serving.
