Ingredients

  • Whole wheat pizza dough - 200 grams
  • Mole sauce - 100 grams
  • Cooked black beans - 100 grams
  • Fresh spinach - 50 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 50 grams
  • Low-fat mozzarella cheese - 100 grams
  • Avocado - 1 medium
  • Fresh cilantro - 10 grams
  • Lime - 1 unit
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the whole wheat pizza dough into a 12-inch circle and place it on a baking sheet lined with parchment paper.
  3. Spread the mole sauce evenly over the pizza dough, leaving a small border around the edges.
  4. Layer the cooked black beans, fresh spinach, halved cherry tomatoes, and thinly sliced red onion evenly over the mole sauce.
  5. Sprinkle the low-fat mozzarella cheese on top of the vegetables.
  6. Drizzle olive oil over the pizza and season with salt and pepper to taste.
  7. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  8. While the pizza is baking, slice the avocado and prepare the cilantro.
  9. Once the pizza is done, remove it from the oven and let it cool for a couple of minutes.
  10. Top with sliced avocado, fresh cilantro, and a squeeze of lime before slicing and serving.
