Ingredients

  • Whole wheat pizza base - 1 medium (about 200g)
  • Chipotle sauce - 3 tablespoons
  • Black beans - 100g, cooked and drained
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Corn kernels - 100g, fresh or frozen
  • Fresh cilantro - 2 tablespoons, chopped
  • Light mozzarella cheese - 100g, shredded
  • Avocado - 1 small, sliced
  • Lime - 1, cut into wedges
  • Olive oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Spread the chipotle sauce evenly over the whole wheat pizza base.
  3. In a bowl, mix the black beans, bell pepper, red onion, corn, cilantro, olive oil, salt, and black pepper.
  4. Distribute the vegetable mixture evenly over the pizza base.
  5. Sprinkle the shredded mozzarella cheese over the top of the pizza.
  6. Bake the pizza in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove the pizza from the oven and let it cool for a minute.
  8. Top with avocado slices and serve with lime wedges on the side.
