Ingredients

  • Pizza dough - 200 grams
  • Poblano peppers - 2 medium
  • Olive oil - 1 tablespoon
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100 grams
  • Oregano - 1 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Mozzarella cheese - 100 grams, shredded
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roast the poblano peppers over an open flame or under a broiler until the skins are charred. Place them in a plastic bag for 10 minutes to steam, then peel off the skins and remove the seeds. Slice into strips.
  3. In a skillet, heat olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer to a baking sheet or pizza stone.
  5. Spread the tomato sauce evenly over the dough, then sprinkle with oregano, salt, and pepper.
  6. Evenly distribute the sautéed onion and garlic mixture over the sauce, followed by the roasted poblano strips.
  7. Top with a mix of cheddar and mozzarella cheese.
  8. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and the cheese is bubbling.
  9. Remove from the oven and garnish with fresh cilantro before slicing and serving.
