  • Queso fresco - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for about 30 seconds until fragrant.
  3. Add sliced mushrooms and diced poblano pepper to the skillet. Sauté for 5-7 minutes until the mushrooms are tender and the peppers are slightly charred.
  4. Stir in sliced red onion and cook for an additional 2-3 minutes until softened. Season with salt and black pepper to taste.
  5. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  6. Spread the sautéed mushroom mixture evenly over the pizza dough.
  7. Sprinkle shredded Oaxaca cheese and crumbled queso fresco generously on top of the vegetables.
  8. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
