Ingredients

  • Whole wheat pizza dough - 200 grams
  • Shrimp, peeled and deveined - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 4 cloves
  • Cherry tomatoes, halved - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Fresh spinach - 100 grams
  • Mozzarella cheese, shredded - 100 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  3. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 3-4 minutes until the shrimp turn pink and are cooked through.
  6. Remove the skillet from heat, and squeeze lime juice over the cooked shrimp. Set aside.
  7. Spread the cherry tomatoes and red onion evenly over the pizza dough.
  8. Layer the fresh spinach on top of the vegetables, followed by the sautéed shrimp.
  9. Sprinkle the shredded mozzarella cheese over the entire pizza.
  10. Drizzle the remaining tablespoon of olive oil over the top and add additional salt and pepper if desired.
  11. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is melted.
  12. Remove from the oven and garnish with fresh cilantro before slicing and serving.
