- 2 large bell peppers (any color)
- 100 grams quinoa
- 200 ml vegetable broth
- 100 grams canned black beans, drained and rinsed
- 50 grams corn (fresh or frozen)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro, for garnish
- Lime wedges, for serving
Steps
- Preheat your BBQ grill to medium heat.
- Rinse the quinoa under cold water, then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa is cooking, prepare the bell peppers. Cut the tops off the peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Stir in the cooked quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to heat through.
- Stuff each bell pepper with the quinoa mixture, packing it tightly. Place the stuffed peppers on the grill and close the lid.
- Grill the peppers for about 20 minutes, turning occasionally, until they are tender and slightly charred.
- Remove from the grill and let them cool for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
