Ingredients

  • 2 large bell peppers (any color)
  • 100 grams quinoa
  • 200 ml vegetable broth
  • 100 grams canned black beans, drained and rinsed
  • 50 grams corn (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Steps

  1. Preheat your BBQ grill to medium heat.
  2. Rinse the quinoa under cold water, then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  3. While the quinoa is cooking, prepare the bell peppers. Cut the tops off the peppers and remove the seeds and membranes.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  5. Stir in the cooked quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to heat through.
  6. Stuff each bell pepper with the quinoa mixture, packing it tightly. Place the stuffed peppers on the grill and close the lid.
  7. Grill the peppers for about 20 minutes, turning occasionally, until they are tender and slightly charred.
  8. Remove from the grill and let them cool for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
