Ingredients

  • 2 medium bell peppers (any color)
  • 150 grams cooked white rice
  • 100 grams canned black beans, rinsed and drained
  • 50 grams corn kernels (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • 50 grams shredded cheese (optional)
  • Lime wedges for serving

Steps

  1. Preheat your grill to medium-high heat.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until softened, about 3-4 minutes.
  4. Add the cooked rice, black beans, corn, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld.
  5. Remove the skillet from heat and stir in the chopped cilantro. If using cheese, mix half into the filling.
  6. Stuff each bell pepper generously with the rice mixture, pressing down gently to pack it in. If desired, top with the remaining cheese.
  7. Wrap the stuffed peppers in aluminum foil to keep them moist while grilling.
  8. Place the wrapped peppers on the grill and cook for about 15-20 minutes, or until the peppers are tender and the filling is heated through.
  9. Carefully remove from the grill, unwrap, and serve with lime wedges.
