- 100 grams canned black beans, rinsed and drained
- 50 grams corn kernels (fresh or frozen)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
- 50 grams shredded cheese (optional)
- Lime wedges for serving
Steps
- Preheat your grill to medium-high heat.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until softened, about 3-4 minutes.
- Add the cooked rice, black beans, corn, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld.
- Remove the skillet from heat and stir in the chopped cilantro. If using cheese, mix half into the filling.
- Stuff each bell pepper generously with the rice mixture, pressing down gently to pack it in. If desired, top with the remaining cheese.
- Wrap the stuffed peppers in aluminum foil to keep them moist while grilling.
- Place the wrapped peppers on the grill and cook for about 15-20 minutes, or until the peppers are tender and the filling is heated through.
- Carefully remove from the grill, unwrap, and serve with lime wedges.
