Ingredients
- 2 large bell peppers (any color)
- 250 grams ground beef (80/20)
- 100 grams cream cheese, softened
- 50 grams shredded cheese (cheddar or Monterey Jack)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish (optional)
Steps
- Preheat your oven to 190°C (375°F).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the cream cheese, shredded cheese, cumin, smoked paprika, salt, and pepper. Mix until well combined and the cheese has melted.
- Stuff each bell pepper with the beef and cheese mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish. Add a small amount of water to the bottom of the dish to create steam during baking.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the tops are slightly browned.
- Garnish with fresh cilantro if desired and serve hot.
