Ingredients

  • 2 large bell peppers (any color)
  • 250 grams ground beef (80/20)
  • 100 grams cream cheese, softened
  • 50 grams shredded cheese (cheddar or Monterey Jack)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Slice the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cream cheese, shredded cheese, cumin, smoked paprika, salt, and pepper. Mix until well combined and the cheese has melted.
  6. Stuff each bell pepper with the beef and cheese mixture, packing it tightly.
  7. Place the stuffed peppers upright in a baking dish. Add a small amount of water to the bottom of the dish to create steam during baking.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the tops are slightly browned.
  10. Garnish with fresh cilantro if desired and serve hot.
