Ingredients

  • Tomatillos - 200 grams
  • Green bell pepper - 1 medium
  • Cilantro - 1/4 cup, chopped
  • Red onion - 50 grams, finely chopped
  • Jalapeño pepper - 1 small, seeded and minced
  • Lime juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Husk the tomatillos and rinse them under cold water. Cut them in half.
  2. In a saucepan, bring water to a boil and add the tomatillos. Boil for about 5 minutes until they are soft.
  3. Remove the tomatillos from the water and let them cool slightly before chopping them into small pieces.
  4. While the tomatillos are cooling, finely chop the green bell pepper, red onion, and jalapeño pepper.
  5. In a mixing bowl, combine the chopped tomatillos, green bell pepper, red onion, jalapeño, and chopped cilantro.
  6. Add lime juice, salt, and black pepper to the bowl and mix well to combine all the ingredients.
  7. Let the Pico de Gallo Verde sit for 5 minutes to allow the flavors to meld before serving.
