- Fresh tomatoes - 2 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh cilantro - 1/4 cup, chopped
- Jalapeño pepper - 1 small, deseeded and finely chopped
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Cheddar cheese - 100g, shredded
- Corn tortillas - 4 small
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the diced tomatoes, red onion, cilantro, jalapeño, lime juice, olive oil, salt, and pepper to create the pico de gallo.
- Drain the canned tuna and add it to the pico de gallo mixture, gently folding to combine.
- In a baking dish, layer the corn tortillas at the bottom, then spread half of the tuna and pico de gallo mixture over the tortillas.
- Sprinkle half of the shredded cheddar cheese on top.
- Repeat the layering process with the remaining tortillas, tuna mixture, and cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and golden.
- Let it cool for a few minutes before serving.
