Ingredients

  • Canned tuna (in water) - 1 can (approximately 150g)
  • Fresh tomatoes - 2 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño pepper - 1 small, deseeded and finely chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Cheddar cheese - 100g, shredded
  • Corn tortillas - 4 small

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the diced tomatoes, red onion, cilantro, jalapeño, lime juice, olive oil, salt, and pepper to create the pico de gallo.
  3. Drain the canned tuna and add it to the pico de gallo mixture, gently folding to combine.
  4. In a baking dish, layer the corn tortillas at the bottom, then spread half of the tuna and pico de gallo mixture over the tortillas.
  5. Sprinkle half of the shredded cheddar cheese on top.
  6. Repeat the layering process with the remaining tortillas, tuna mixture, and cheese.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and golden.
  9. Let it cool for a few minutes before serving.
